I used Heather Pace’s Ultimate Raw Ice Cream Cake recipe book to create Pomegranate Heaven. First, I altered Heather’s brownie bite recipe to make cookie dough ice cream. I took out some of the nuts, and replaced them with tahini to make a more smooth texture. I also omitted the cacao powder, and added some vanilla powder to make it taste like cookies! Yum! Then, I folded cacao nibs into the cookie dough batter. I threw these cookie dough bites into Heather’s Vanilla Ice cream.
