Veggie Sandwich

My daughter introduced me to my new favorite sandwich. If you're a vegetable lover like me, you'll probably love it too:

  • 2 pieces of toasted honey whole wheat bread (buy or make the real stuff)
  • honey mustard dressing
  • 1/2 avocado sliced lengthwise
  • 4-6 pieces of sliced cucumber
  • Lettuce or fresh spinach leaves
  • 2 tomato slices
  • slice of yellow onion (optional)
  • salt to taste

Toast the wheat bread, spread on the honey mustard dressing, then layer on the vegetables and add a dash of salt. It's easier to eat if you cut the sandwich in half. Yum! :) A tip on the avocado - either make a friend a sandwich with the other half or cut the avocado in half with the peel on. Then put some lime juice on the exposed portion of the avocado, wrap securely in plastic wrap and put it in the refrigerator. Avocados never keep long, but they'll keep a little longer with the peel on and lime juice on the cut side.

Homemade Christmas Goodies

We've had a lot of company at our house this past summer and fall and invariable whenever people get ready to leave, they ask me if they can take my husband home with them. Should I be jealous?
